Rosélys Restaurant at Fairmont

Rosélys is located inside the Fairmont Queen Elizabeth hotel in Montreal, Quebec.

The hotel opened in 1958 and was considered to be a “masterpiece of innovation.” During the 1960s England’s Queen Elizabeth II and many other notable leaders, actors and musicians made their way to spend their time at the Queen Elizabeth hotel.

When the hotel went through a complete renovation in 2017, Rosélys was part of the plan for the next generation of diners at the hotel.

Rosélys takes both Canada’s French heritage and English influence to create meals that dazzle guests. They offer breakfast, lunch and dinner seven days a week, afternoon tea and Sunday brunch.

Head chef Maxime Delmont has over 15 years of experience in the high-end restaurant industry. He has worked in hotels and upscale restaurants all over the world. Chef Delmont focuses his menu around sourcing local ingredients, creating a freshness that all guests can taste.

Since its opening, Rosélys has garnered attention from critics, almost all of whom have gave them a good review. Across the board the critics encourage people to try Rosélys’ desserts. Jean-Marc Guillot and Natacha Lehman are the lead chefs for pastries and desserts.

The restaurant also has an extensive wine list. Comprised of almost thirty different types to choose from, there is something everyone is sure to like, plus new wines to try.

While Rosélys is more of a fine dining experience, you get not only great food, but an enjoyable atmosphere and ambiance, thanks to the restaurant’s décor. When the hotel was renovated, it stuck to its roots. It is inspired by the 60’s but with a modern twist.

Rosélys is open daily from 6:30 a.m to 9 p.m. Children ages 6-12 eat for half price, and children under the age of five eat free.
