    What is Ember & Cork?

Ember & Cork is the latest culinary venture aiming to revitalize downtown Schenectady. Located just down the street from the legendary Proctors, a theatre and former vaudeville house that is listed in the National Register of Historic Places. Helmed by acclaimed chef Marc Alvarez, Ember & Cork delivers bold flavors and innovative techniques with each dish elevated by the use of wood-fire. After spending a decade serving as Executive Chef in various restaurants on the Caribbean island of Anguilla, Chef Alvarez returned to the Capital Region to ignite his innovative fire-focused concept, opening Ember & Cork in 2024. Combining wood-fired sensibilities with a unique global palette, Ember & Cork is the perfect spot for diners with an appreciation for culinary creativity and a touch of smoke.

A modern bar with a square counter surrounded by high chairs, illuminated by hanging pendant lights. Bottles and TVs line the back, and a single person sits at the far end. The warm, inviting atmosphere makes Ember and Cork the perfect gathering spot.
