    Experience Dassai Blue

Dassai Blue Sake Brewery brings the tradition of Japanese sake-making to the Hudson Valley. The 55,000-square-foot brewery produces craft Junmai Daiginjo sake using both Japanese and American-grown rice, local water and traditional brewing techniques. Visitors can also see portions of the brewing process through windows overlooking the production areas.

Dassai Blue was created with the goal of making sake specifically for the American environment, embracing the water, climate and food culture of New York rather than simply replicating the company’s sake made in Japan.

Modern building with wood paneling, large windows, and a metal roof surrounded by greenery and young trees under a sunny blue sky—reminiscent of the tranquil setting at Dia Beacon. A wooden bench is on a stone path near the entrance.

    Tour, Taste & Learn

Visitors can choose from several ways to experience the brewery. Production Tours and Tastings include a 45-minute to one-hour tour through the production area led by a brewer, followed by a sake tasting. Standard Tours and Tastings offer a shorter guided tour led by a sake expert followed by an hour-long tasting. Food add-ons, including sushi and cheese and meat plates, are also available.

For visitors who prefer to explore at their own pace, a Self-Guided Audio Tour provides an introduction to Dassai Blue, its brewing philosophy and the sake-making process.

    New York-Made Sake

Dassai Blue specializes in Junmai Daiginjo, a premium style of sake made without added alcohol or additives. The brewery uses Yamada Nishiki rice, koji, carefully selected yeast and water to create its sake.

The tasting room is open to visitors seven days a week, and guests can stop in for a glass of sake and light bites without a reservation. Advance reservations are preferred for tours and tastings, though walk-ins may be accommodated depending on availability.
