    A Taste of the Hudson Valley

    American Bounty Restaurant has been a part of the Culinary Institute of America since 1982, when the school set out to showcase the diversity and traditions of American cuisine. Today, the restaurant continues that mission with contemporary and traditional dishes inspired by regional, seasonal and sustainable ingredients.

    Set on the CIA’s Hyde Park campus above the Hudson River, American Bounty offers a casually elegant dining experience while giving guests a firsthand look at students working in a professional restaurant environment. Students in their final culinary and hospitality courses cook and serve guests with guidance from CIA faculty.

    Farm-to-Table Dining

    The menu changes frequently with the seasons and highlights ingredients sourced from Hudson Valley farms and other regional producers. Guests can expect a rotating selection of appetizers, entrées, desserts and beverages rather than a fixed menu.

    American Bounty works with a network of local farm partners, including Hudson Valley Fresh, Crown Maple Syrup, Ronnybrook Farm Dairy, Nettle Meadow Farm and the CIA’s own campus gardens. The restaurant also offers an extensive wine and beverage selection to complement its seasonal menu.

    For visitors looking to experience more of the Culinary Institute of America, the CIA Experience offers a separate public tasting, learning and touring program on select Wednesdays through Saturdays.

    Dining & Events

    American Bounty is open for lunch and dinner Tuesday through Saturday, with reservations recommended. The restaurant also hosts special dining events throughout the year, giving guests opportunities to experience seasonal menus and meet the students behind the food and service.

    The restaurant follows a no-tipping policy for students. A 20% Student Support Surcharge is added to each check and returned to students through scholarships.

    Tuesday–Saturday, 11:30 a.m.–1 p.m.

    Dinner:
    Tuesday–Saturday, 6–8:30 p.m.

    The restaurant is closed Sunday, Monday and major holidays, with additional closures throughout the academic year. Check the restaurant’s website before visiting.

    Take Amtrak to American Bounty Restaurant

    Take Amtrak to Poughkeepsie Station, which is the closest Amtrak station to the Culinary Institute of America. From the station, take a taxi or rideshare to the CIA campus in Hyde Park. The campus is approximately three miles north of Poughkeepsie, and CIA specifically recommends taxi service from the Poughkeepsie train station.
